Sun city hand sanitizers

We have pivoted and changed our process to help our beautiful city out in these uncertain times. Currently, we are making 4oz, 16oz, 25oz, 1gallon and 5 gallon buckets available. The bulk of what we make is focused on supplying first responders but we have reached out to local restaurants to supply them with 4 and 16oz bottles. These local restaurants are more equipped to handle large crowds and offer our community a chance to support them with food sales. We will also be selling sanitizer here at our distillery from 9-3pm Monday thru fri.

Our Story

Sun City Distillery is located downtown at 1305 Texas Ave. in the heart of El Paso, Texas. We are the city's first and only small batch micro-distillery. Although, the distillery doors just opened in 2020, Our owner and Head Distiller Ryan Carrillo has been creating and experimenting with recipes and batches for over seven years. Ryan has over twelve years of distilling and rectifying experience under his belt. Through many collaborations and experimentation's we have created a blend of premium spirit selections that El Paso can be proud to call their own. Our main goal for this distillery is to have all of El Paso feel at home when they walk through our doors. We want to rip back the curtains and let everyone see what goes into every one of our products. There are no secrets and no proprietary solutions, just hard work and dedication to the craft.  Transparency is the only way we can gauge our success and its the only way we can  make the spirits that our great city deserves.

Available products

We are constantly testing out new batches and recipes, to give our customers a variety of choices. Our rum brand "TranQuila" offers a series of choices from our "Blanco" white rum to our flavored rums, "Manzana","Canela" and "Negro". We also offer our "Acere"Gin. This is a full flavored gin with an amazing 9 botanical mash bill. We are currently testing out more rum flavors as well as new spirits.

Chavalo Whiskey

Chavalo whiskey is named to promote the fact that this whiskey is a young whiskey. Chavalo is aged less than 2 years in used whiskey barrels. Most whiskeys are defined by their age, grain bill and their country of origin. Chavalo is made in house from  a malted barely mash that is dominated by a 2-row Munich malt with a sprinkle of Black malt. We make Chavalo in very small batches that only yields about 70 bottles a run. This particular barley mash bill and finishing was influenced and developed by Miguel Arciniega. We will continue to collaborate with breweries and developers, to play with different grains, barrel types and finishing processes to come up with unique Whiskey choices for El Paso.

Acere Gin

Acere is a Cuban word that quite literally refers to an assortment of smelly monkeys. We loved this name because Gin is a spirit that is made up of an assortment of smelly botanicals.  Acere is not a light Gin, it is packed with flavor and is a respectable 92 proof. We decided to use the re-distilled method for Acere , we felt like this gave us the most flavor and the best results with our botanical bill. Our botanical bill consists of Juniper Berries, Lemon Zest,Grains of Paradise, Orange Zest, Angelic Root, Cinnamon Spice, Coriander, Cardamom and Licorice Root.

Tranquila diablo

TranQuila Diablo was a lot fun to create, we experimented with tons of spices but ultimately concluded that all we needed was 6 amazing spices. Diablo uses Cinnamon spice, Star Anise, All-Spice, Orange Zest, Habanero Chile and Red Peppercorn. Diablo is a high proof, high flavor Rum with a spicy kick.

Micro-Distilling And Batch Process

The one question we get on a daily basis is "What is Micro-Distilling"? Micro-Distilling refers to the amount of spirits a distillery can produce in one year. In this case its 50,000 proof gallons a year. Compare this to the top Rum distilleries that average 16.8 million cases a year. They actually spill more than we can make. So, basically we are a small two man operation. The beauty of a small operation is that every single step of the process is personally monitored by our head distiller. 


Batch Process

We are a batch process plant, which simply means we run one batch at a time. We carefully select which fermentation wash gets transferred to our column still. We then concentrate solely on that one batch until its finished. This allows our master distiller to make the critical process cuts that make up our unique taste profile. At every step of this process we take samples of our spirits, checking for smell, taste and color. Because we use the batch process we are able to discard the foreshots, tails and make very strict heads cuts. Most big distilleries run whats called a continuous distillation process. This is where they continuously throw new fermentations into their huge 5-story column stills. Never stopping, never slowing down, they run 24/7, seven days a week. They rely on machinery to make process cuts and make flavor profile decisions. We feel this shows itself in the final product and we would never risk product over production.
